Open-faced Salmon Sandwich

Watching Top Chef doesn’t guarantee that any of my culinary creations are edible.  Yesterday I poached salmon in some white wine and water and some fresh dill and garlic.  It was very good, but I had another serving of salmon leftover, and limited ingredients, sos I got creative and decided to give myself a “Quickfire Challenge”.  Plus I didn’t have enough money for the taco truck.  This is an open-faced salmon sandwich and it sure tasted better than it sounds or than it looks.  In fact, I would suggest that anyone with leftover salmon give this recipe a shot.  It won’t kill you.

Open-faced Salmon Sandwich

What you’ll need:
Leftover salmon fillet, cooked and flaked
2 C Soy Milk
1 Tbsp Butter
1 Tbsp Flour
1 Clove minced garlic
1/2 C Mixed frozen veggies (I used country blend - carrots, corn, green beans)
Pinch of nutmeg
Salt and Pepper to taste
2 Slices of bread (I used multi-grain sourdough)

Add butter to small pan on medium heat.  Add soy milk before pan gets too hot, and stir in flour.  In a separate pan, cook frozen veggies as indicated on package.  Continue stirring sauce, adding nutmeg, salt and pepper.  Add flaked salmon and veggies.  When all is hot, and sauce has thickened, spoon over toast.  

I guess you don’t have to add the veggies, but you should, for health reasons.  If you’re really good, yours should look like this:

    That looks like something that was in my sink woke up after a night of drinking/blacking out at habanos last Wednesday.
